A week in the life of a vegan...

It's not half as bad as you think!
But I'm sure there are still people out there who think I'm slowly starving to death, wracked by anemia and malnutrition and cravings for surf-and-turf platters. So, I thought I'd share a week's dinner menu just to give people an idea of what it is vegans do with their time.

  • tofu cacciatore with vegetable salad (peapods, carrots, corncobs, broccoli, cauliflower, fresh dill in light vinagrette dressing)
  • lentil soup and leftover veggie salad
  • spinich cutlets with rice pilaf and lima beans
  • garlic mushroom & soy mozza burgers
  • Asian "veatballs" with rice and peapods
  • broccoli nuggets and fries
  • beaf stew

It actually sounds really good. I did the vegan thing very briefly, and might try vegetarianism again when I move out on my own - for financial reasons more than anything. I'm not sure I'll be able to support my modest meat habit.

Fresh produce and soy milk are probably the priciest things we buy these days. Lentils and beans and tofu are dirt-cheap, so it isn't too tough to be vegan on a budget. I cringe now at what we used to pay for chicken! *shudder*

Oh, chicken is ridiculous, I know. Do you buy organic? Way too cost prohibitive here...

Cost prohibitive, you got it! No, I can't afford all organic, but I'll get it when I can.

Yeah, what's up with that? The last time we were up there, we could buy steak for less than chicken.

Well, we've got a lot of cows around here, but I have yet to see a chicken.

Now I have a question. What is this tofu you are talking about?? I have heard of it but I have no idea what it is. I have a friend here in Wisconsin thats a vegetarian. But whats funny is his whole family isnt but him. Its kind of funny in a way. So his mom has to make two whole different meals when she cooks lunch and dinner. but anyway that does sound interesting on your diet here.

Tofu: soybean curd, kind of like cheese. It doesn't really have a flavor on its own, so it absorbs the taste of whatever you cook it in. High in protein, low in fat, pretty cheap!
I have yet to meet any vegetarians here. I know they're around somewhere...

ok. i am glad to hear you are healthy though. More than likely more healthy eating that way than I am really but I dont know if i could personally go vegatarian. Well I am really off to sleep now. I will catch you all laer.
